Broccoli Soup

Ingredients

4 Medium Russet Potatoes Peeled And Diced
2 Carrots, Diced
1 Shallot
½ Onion, Diced
2 cloves Garlic, Minced
1 big Broccoli chopped
1 cup Almond Milk
1 tbs. Cornstarch dissolved in small amount of water
2 Tablespoons Lemon Juice
Salt And Pepper, to taste

 

How to:

Mix all ingredients and simmer until vegetables are tender about 10 minutes.
Crush or puree vegetables. Add salt and pepper to taste.
Top with croutons if desired.
Done in 45 minutes
